Loving the fully raw lifestyle! My favorite part is the fruit!!!!! I love being able to eat all the pineapple and blueberries and watermelon and grapefruit and bananas and blackberries and.... you get the point. Sitting here watching Cheers on Netflix and peeling breakfast... grapefruits. Blueberries for snack, I bought 4 pints. Nom Nom Gone! ;)
Starting to go fully raw 5 days a week and 2 days of two fully raw meals and one not, but still vegetarian, of course.

I wouldn't want an overweight nutritionist...
It has been a great month so far. I have been kicking butt and taking names.
So far this week, Sunday through Friday, I have worked out 512 minutes! YAY me. haha
Anyways, I've been trying to get rid of the stubborned belly fat that I cannot stand anymore.
So far, so go. I have lost one pants size, and need a belt with all my pants. I cannot even wear my shorts anymore without having to hold them up, which stinks because I cannot justify purchasing new shorts because it is not summer anymore and who knows if I can drop one more size before then.
Sometimes when I am too busy to write down what I ran/jogged/walked, I just take a picture and hit the road because lets face it, I'm one busy mommy. :) So, I figured I would throw some pictures up of how I've been doing the past few weeks.
SO, I have lost another pound and am feeling great. Now if only I could get motivated to do my homework. School this semester is not challenging, therefore, I am bored and not motivated as I was last semester. Well, I need to study so I can go run my two miles today. OHOHOH! Which by the way was my goal I set for myself one month ago and I reached it last week. I just tried and succeeded. YAY! lol I know, I am such a nerd. I love running! (I need another set of running clothes...)
Lesson learned: Missing class stinks, but it was not my fault. and I'm reaching and far exceeding some of my goals, which makes me happy, and push that much harder to reach the ones I'm not doing so great with (like my fiber and veggie targets...).
Current weight:118!
Longest running time this week: 30 minutes straight!
Something I did well: I made a 100 on my philosophy quiz this week and another 100 on my philosophy test this week!!!!!! YAYAYAYAYAYAYAYAYAY!

I found sugar not made from GMO Beets! (Apparently 50% of sugar is made from Genetically Modified Beets, not sugar cane.) :/
Ooooo, my wrap the other day, well I ate half and shared the other half, but it was splendid. It had coleslaw on it! YUM!

OH so yummy wrap!
Today for lunch I made this wrap. It was a spinach wrap tortilla with mayo mixed with cumin, ham lunch meat, shredded cheddar cheese, and spinach leaves. It was YUM!!!!
Ok, so I have been working out non-stop lately. Trying to get back into shape. I feel great! Off to study for nutrition! Goodnight!

OH this was a quesadilla I made my roommate two weeks ago. I was so amazing. I had one similar but this one had bell peppers, velveeta cheese, mushrooms, rotel, onions, and cheddar cheese. It was the best quesadilla I've made to date!

I've lost something...
I love school. Even though most days it is extreamly boring, I still love it. Some people aren't able to go to school or think they cannot do it.... That used to be me. I used to think how can I ever go to school? I have two kids! Who has the time???
Well, I'm doing it. Now I just need to find a job. Great news! I will graduate in just one more year!!!! YAY! My Nutrition and Diet Therapy teacher told me about another Dietetics program today. I got the pamphlet and everything! YAY!, again. This year is just flying by. The 3rd week of classes is already over! Christmas and Thanksgiving will be here before I know it!
OH! So, I have lost something!!! I lost one pound! Yes, you may think one pound, who cares. But to me that is huge. I now weight 4 pounds lighter than I did on my birthday at the beginning of the year. YAY me. I've been running 5 days a week for the past 2-3 weeks and have been practicing Yoga. I have been doing both Hatha Yoga and Power Yoga. As much as I love the Power Yoga, because it is fast paced and whatnot, I think Hatha Yoga is more my style. I want to be able to do push ups while doing a hand stand! That stuff is awesome!
Whew, well I guess that is my little vent for the week. I may come up with something tomorrow or this weekend. I intend on making a Banana Carmel Pie! YUM! (((There goes all my hard work in loosing another pound. I'll have to try one tiny slice and give the rest away.

In the swing of things
So its the second week of school! YAY!
There is very little likely that I will keep up with my blog during this semester. I am taking SIX classes! YIKES! I know.
Well, I am going crazy 24/7 almost juggling everything I am doing. And you know what, its working. I have to give God all the credit because without Him I would fall and not get back up. I started my nutrition and diet therapy class last week and love looooove the book. Now the teacher, not so much to love. She is one of the monotone teachers, who says "UM"... A-LOT! I am super duper bored in class because I am already so far ahead in the book. I am trying to keep interested, but my patience is fading fast. I just may try and switch to her online class that way I can speed through this super easy subject, and not have to go to school so stinking early. Well, one good thing that is coming from the class is that she talked to us the first day about the choosemyplate.gov website... I love the site. I found it at the very beginning of this year and was addicted after the first day. It had loads of information about eating healthy and balancing meal plans and all that jazz. :) YAY! I'm a nerd, I know. Whenever it comes to nutrition, I want to know everything! Annnnnyways, I have since found my way back to the web site and realized I've lost 3 lbs. since the beginning of the year. WHOO HOO! OK. So, I am once again hooked on the super tracker part where you can input all the food and drink you eat in one day and it will tell you how you are doing on eating right, etc., etc. CHECK OUT THE SITE! IT's truly awesome. It will blow your mind with how good or poorly we are eating. I was shocked about how little carbs and protein I really eat. I stick mainly to veggies and fruit. Well, needless to say, I think, I am back on to balancing my diet... AND I have starting working out again. BIG YAY! I have already worked out 167 minutes this week. :) GO me!
Anyways, I just wanted to blog about the first week of nutrition. I don't even have time to begin to rant about my other classes.
Lesson learned this week: Balance my diet better. Hello! ;)
Thing I am doing well: eating lots of fruits. and working out strong.
Things I need to work on: Better balance my diet, for real. and staying in my budget for food each week...
Things I look forward to this semester: toning my body through Yoga and Running!!!
Gotta love it!
God gave me the desire to be a Holistic Nutritionist.

First Day of School & Homemade Corn Dogs
Today Adrianna started Kindergarten. I was worried I was going to cry... but nope, not today. Now yesterday, ya, tears were happening. Well, she went in just fine. At first she didn't want me to leave, she was shy and was trying to sit on my lap. I got her to sit by a little girl whose name was similar to hers, but still, she was shy. I stayed for probably 10-15 minutes and talked to her and the little girl next to her, trying to ease the shyness and when I told her I was going to go she was A-O-K.
Yay for first days! ((OK seriously, when I went to kindergarten we didn't have a billion things in the room, I remember desks, a circle rug with the letters of the alphabet and some closet doors where we kept our jackets and backpacks... How do you remember your kindergarten classroom??))
So today was supposed to be meatless Monday, but I did not do too well on the planning, plus I wanted to make something cool on the first day of school.
So.... instead of meatless Monday we ate homemade corn dogs! They were pretty good. Not too impressed because I don't like hot dogs and it used a lot of oil--->>>> unnecessary oil. Well, I did not take a picture of tonight's dinner, oh well, it wasn't picture perfect anyways.
Make again? No, it used too much oil when I could have had my roommate make hot dogs instead (with BACON!) mmm.
Rating:3/5 probably because I am biased against hot dogs. I don't usually eat them.
Times I spilled/dropped things: 1, I dropped a hot dog on the floor.
Lesson learned: I should have made fried fish, w/ hush puppies and coleslaw instead. Corn dogs are not my thing, not even homemade.
Price of dinner: About $7 total. I purchased 1 package of Angus Hot Dogs, 1 thing of canola oil and two baking potatoes. To fry the corn dogs I made a mixture of flour, milk, egg, baking powder, oil and salt and dipped the hot dogs in a tall cup filled with the mixture. It was quick and easy, but I still cannot get over the amount of oil used just for corn dogs. Ick! I mean if I'm going to fry something in almost 2 inches of oil in my large pot I will fry some chicken or some fish... NOT hot dogs. BLEH.
Gotta love it!

Monday's Meatless Pasta!!!
YAY for Mondays! lol
Well, I found this great recipe for Pasta Primavera and thought I would try it for our meatless Monday meal... I've been trying to get better at designating one day every week for meatless meals, but it turns out that I make a few meatless meals each week and they aren't planned the same day each week. OK, so I'm trying the meatless Mondays thing, leftover Thursdays, and crock pot Wednesdays. :)
Tonight I used:
ten sliced mushrooms
some broccoli
three carrots
a dozen or so grape tomatoes, halved
not quite a whole bag of snow peas
half a box whole wheat fettuccine
1 (8oz) carton of heavy whipping cream
maybe 1 cup Parmesan cheese
1 clove of garlic, diced
3 tbsp butter or margirine
1/4 cup chopped fresh basil (from my balcony garden) :) :)
and a few sprigs of parsley from my garden (I didn't measure)
I forgot the salt and pepper, which would have improved the taste, but this was great. The mushrooms I thought tasted like meat. :)
How I made it:
First, I prepped my veggies.
Next, I cooked the pasta according to the box.
Third, I blanched the veggies.
Fourth, I drained the veggies and pasta.
Fifth, I quickly sauteed the mushrooms and garlic in the butter.
Six, I poured in the cheese and whipping cream into the sauteed mushroom mix. Once that started bubbling I dumped in the veggies and the rest on the ingredients and mixed, mixed, mixed.
Seriously, This was SOOOOO easy. I was very impressed. I would have been a little better if it had some onions, but this was GREAT!!!!!!!!
Well, I am babysitting my little niece and she ate all her food, with the exception of the mushrooms, which I don't blame her. As a kid mushrooms look disgusting. She did so good. I did not think she would eat the carrots or peas, but I got her to eat them! YAY! The kids of course ate theirs, they are used to my healthy cooking. lol OH and for dessert they are the Layered Buttermilk Carmel Frosting Cake! And boy DID THEY LOVE IT!!!! My niece was trying to stuff the entire piece in her mouth... hahahaha Riley was stoked as soon as I put the cake in front of her. Her eyes lit up like firecrackers!

Taste: 4/5 just a little flavorless, I think that the tomatoes made it a little watery. I think next time I will use more basil and some red onion and maybe even some of my fresh oregano.
Will I make this again? YES! I loved this recipe, and the kids loved it as well. What I especially loved about it was that I didn't had mounds of leftovers... I don't like having leftover pasta. It isn't the same once reheated, esp. if there is broccoli in it.
Lesson learned: Don't forget to put salt and pepper. 1/4-1/2 tsp of each should do fine.
Experience needed: beginner. This was as simple as boiling water and chopping basil and garlic. E-Z!
How many times I spilled/dropped things: One. I dropped a piece of broccoli on the floor when I was draining the veggies. No big mess ups today (besides my lack of S&P in the food).
Gotta love it!
