Let me just say that first of all,
I was super sketchy about making them but hey I love cooked red potatoes and essentially that's what the recipe looked like. First I had to boil the potatoes (I used three) whole in water for 8 minutes, then drain and leave in the fridge overnight. So, the next morning, yesterday, I cut up the potatoes in cubes and my onion and garlic and preheated my skillet with butter and oil (wierd but thats what it said).
Needless to say three red potatoes diced was more that what could fit in a single layer in my 10" skillet. So, I had to do it in two batches, which actually turned out to be good. Try and try again is what I tell my kids. The first batch, I burned. but not so bad as not edible. They were good, just the onions burned really. The second batch was easier. I actually measured out the butter and oil. (Usually when I cook I just pour the oil or scoop out the butter w/out measuring and it turns out fine. Not the case with this, hash browns need lots of oil. AKA Fat.)
So, D said the hash browns were bad a. Not my words or his either, his language was more, lets say, unneeded. Honestly, I don't understand why people cannot describe things without using "adult" language we'll call it. <-My vent for a day HAHA.
My first batch, which the o's ended up burnt.
My second batch, because I can do better. (They were cooking so much better w/ more oil).
God is so good to me!
